This month was another home-run set of meals sent from HelloFresh! They keep getting better and better each month and I'm not complaining ONE bit!

with Collard Green-Potato Hash and Black Pepper Gravy
This dish was so to die for!! That gravy, there are no words. I actually made this on a night where I knew I was going to be home a little later, so I prepped all the ingredients earlier and par-baked the potatoes. This really cut down the cooking time later and I still got to enjoy a delicious home-cooked meal and it wasn't 10pm!

with Scallion Chimichurri and Spinach Couscous Salad
SUCH an easy dish to prepare! Really, all you're doing is boiling the couscous, and grilling that steak! The flavors of the steak were so darn good! I don't think I've ever thought to use cumin on my steak and let me tell you, it added a nice little crust of spice heaven! The lemony scallion chimichurri was a nice addition to the whole dish as well!
|| Open-Faced Turkey Patty Melts ||
with Mushrooms, Gruyère, and Arugula Salad
YUMMMM!!!! I love myself a good old fashioned melt...of any kind! You give me cheese melted on anything and I'm a happy camper! This was so tasty and again, probably something I wouldn't normally think of to make on a regular weeknight! Also, I'm probably one of the biggest ARUUUUGULA fans (yes, that's how I say it every time), so this fresh salad served with the patty melts were nice compliments to each other!
|| Shrimp Lo Mein ||
with Udon Noodles, Green Beans, and Carrots
I truly wish there were vats of this in my fridge at all times, it was that good!! Udon noodles are my jam and mixed with THIS sauce, you can't go wrong!! This was probably my favorite out of all the meals for SURE!
